Apple and avocado crab salad.

 

Yes, this crab salad recipe is proof that I am fully committed and taking my new year’s resolutions seriously. Thanks for asking ;)

It may be cliche but if we’re going to do this clean and healthy eating thing for 2014 then we’re going to do it with our BALLS TO THE WALL! Notice that I said we’re and not I. You ARE with me right? Great!

Here’s how: Add these five super foods to your crab salad and add days to your life. Wait…did your resolution include adding extra days to your life? No -well go add it to your list right now, I’ll wait.

Great you’re back! Now once you’ve eaten this salad you can cross that off your list and feel super accomplished.

Here’s the deal so you can run out and tell your friends that they are ruining their bodies by not eating the following foods:

Apples – These common fruit are chock full of antioxidants and Vitamin C but the best properties about apples is their abilities to help the digestive process.

Spinach -Popeye was right…spinach kicks ass. We all know that it’s a good source of iron but if you eat these leafy plants your eyes will benefit as well. Spinach has Lutein and Zeaxanthin which helps to protect your eye balls from the sun.

Almonds – They contain the good fats that our body needs, polyunsaturated and monounsaturated fats, to support good cholesterol levels.

Coconut Oil – If you don’t already substitute coconut oil for every other oil (including olive oil) then you need to. There is nothing else that will do your body better than coconut oil. Yes, it has a lot of calories but don’t let that deter you. Use it!

Don’t forget to drink a glass of red wine with your salad to get bonus super food points and also a little buzzed so you leave me a raving review ;)

 

Ingredients:

  • 2 apples sliced
  • 2 ripe avocados sliced
  • a handful of almonds
  • 4 cups of fresh spinach
  • 1 cup of fresh picked crab meat
  • 1 heaping Tablespoons of coconut oil

For the salad dressing

  • 2 Tablespoons of olive oil
  • 1 Tablespoon of fresh squeezed lime juice
  • 2 Tablespoons of hummus
  • 1 teaspoon of fresh ground pepper

 

Method to the Rad-ness:

In a medium sized bowl whisk all the ingredients for the salad dressing and set aside.

Arrange the salad on two plates starting with the spinach on the bottom layer. Add the slices of avocado and apple alternating between slices. Sprinkle the almonds over the salad.

In a small frying pan on low/medium heat melt the coconut oil. When the oil is hot add the crab meat and stir. You just want to warm up the crab meat and coat it with the coconut oil it should take two minutes or less.

Divide the crab meat equally between the two plates and serve.
