Love is in the air …Valentines day is coming soon. Do you have a plan for wooing yet?

No, me neither. I’m not a big fan of pretentious angels trying to stab me with their arrows. I am, however, a fan of celebrations. Because celebrations almost always mean good food and delicious desserts (as in chocolate cake Davis ;)).

I hate going out for dinner on Valentines day. All the fancy restaurants are over-crowded, over-priced and under staffed for this special occasion. But that doesn’t mean we won’t be eating something delicious and fancy. I like to make something a little extra special. Something that may take a little extra time to prepare but not so much that there is no time left for each others company.

I’m making a homemade pasta with a decadent light saffron cream sauce to compliment the fresh crab meat. You can cut out a lot of the work buy buying some fresh made pasta at the market.

P.S. I know the picture shows linguini with imitation crab -this was a trial run of the beurre blanc recipe. On Valentines Day I’m cooking up the real thing guys.

And another thing …New Year’s resolutions can go screw themselves for one day. I’m not missing out on chocolate cake. Davis – pretty please make there be chocolate cake.

 

 Ingredients:

For Beurre Blanc:

  • 3/4 cup of whipping cream
  • 1/4 cup of butter
  • fresh squeezed lemon juice
  • a tiny bit of saffron

For Pasta:

  • Enough fresh pasta for two people
  • 1 cup of crab meat
  • a handful of snow peas
  • 1 cup fresh broccoli florets
  • butter blanc sauce
  • 3 tablespoons grated Parmesan cheese

 

Method to the Rad-ness:

 

First start boiling water for the pasta in medium sauce pan and in your steamer pot start to boil water as well.

In a small sauce pan heat the whipping cream and saffron until it thickens being careful not to let it boil. Whisk in the butter small chunks at a time. Keep the sauce warm on the lowest setting while everything else is being prepared. When you are ready to pour it onto the pasta add a squirt of lemon juice.

Once the water starts to boil in the steamer add the broccoli and wait for three minutes before adding the snow peas. Cook for an extra two minutes.

Once you add the snow peas to the steamer add the pasta to the pot of boiling water and cook until al dente or according to package directions. Fresh pasta will cook much quicker than dried pasta (about 3 – 5 minutes).  Once cooked drain and rinse in cold water.

Add the veggies to the noodles and add the sauce -remember to add lemon juice to the sauce.

Plate the pasta and add the crab meat on top and serve.
