Salmon pinwheels with crab stuffing

Crab Stuffed Salmon Pinwheels

It’s really easy they said. Slap on the stuffing and roll it up they said. Pffft, I say! The end result of my attempt at making a pinwheel turned into a mucky mess. (I wish I took a photo!)

BUT wait! They were still delicious. The marriage between crab stuffing and salmon is undeniably awesome!

I have yet to master making salmon rolled pinwheels, so I made these. Take a close look at the picture and notice that I cheated.

I couldn’t get the pin to wheel so I cut a chunk of the salmon placed it in the center and voila…even better than the real thing. Well maybe not but I’ll keep trying to spin salmon into a wheel and come back and tell you guys all about it!

Anyhow, unless you are serving this to your in-laws the only thing that matters is how they taste and this crab stuffing recipe is fabulous.

To make these mock pinwheels like I did, here’s what you need to do:

 

  1. Take your salmon, that has been fileted and skinned, and spread it out on a cutting board.
  2. From the tail end of the salmon cut four 1 inch strips so that the narrowest part of the salmon has been cut into strips. Save these salmon strips for the following steps.
  3. Spread your crab stuffing (see recipe below) evenly across your salmon leaving ½ an inch from each side.
  4. Now put the salmon strips that you previously cut into the center of the crab stuffing drawing a line with the strips from the head to the tail.
  5. Now roll up the salmon (lengthwise) overlapping the salmon where you left ½ an inch from the sides. Grab a sharp knife and cut the roll into 2 inch steaks.
  6. Bake in the center rack at 375* F for 18-24 minutes.

Recipe for Crab Stuffing

Ingredients:

  • 1 package of cream cheese (softened)
  • ½ cup of cheddar cheese (grated)
  • 1 teaspoon of dill
  • 2 garlic cloves (minced)
  • 1 can of Jumbo lumb blue crab meat

 

Method to the Rad-ness:

In a medium bowl stir together all the ingredients except for the crab meat. Slowly fold in the crab being careful not to break apart the crab lumps.
