Did you know when a baby imitation crab is born it is bottle fed a strict diet of coconut milk to infuse the mock crab meat with all the coco-nutty goodness in the world?

No?

Well, good because I lied about that part but you would never know by tasting this coconut crab. If you like bounty chocolate bars, Malibu rum in your morning coffee and coconut milk with your cereal then you are going to love this imitation crab meat recipe. However, if you’re in the majority and you don’t like any of those things (and who does…really?) then you will probably love this recipe as well.

I call it Kicked in the Coconuts because it makes a plain imitation crab a star by adding some shredded coconut and the hot spices kicks plain ol’ boring imitation crab in the…well you know.

I haven’t tried this recipe with imitation crab sticks but it would probably turn out just as delicious.

 

Kicked In the Coconuts

 

Ingredients:

  • 1 lb. of your favorite chunks of imitation crab meat
  • 1 cup of shredded coconut
  • 1 egg
  • 1 tsp. cayenne pepper
  • 1 tsp. of white pepper
  • 1 tsp. of garlic powder
  • 1 tsp. of onion powder
  • ½ tsp. salt
  • Oil for frying, enough to fill your frying pan ¼ inch thick.

 

Method to the Rad-ness:

Heat the oil in your frying pan or skillet to medium/high heat while you are preparing the other ingredients.

In a small bowl mix the peppers, garlic, onion and salt together.

In another small bowl beat the egg and set it next to the spice bowl.

On a plate spread out the coconut and put it between the egg bowl and the frying pan.

Grab each piece of imitation crab meat and lightly dip one side in the spices –then dip the entire piece in the egg and coat it in the coconuts. Add that piece to the frying pan and do the same to the remaining pieces.

Fry the crab pieces until the coconut turns a golden brown color and drain them on paper bags, or paper towel.

I like to dip them in this spicy pinapple chipotle sauce for some extra zip, but they taste great with a squirt of lemon or lime juice as well.
