Healthy Imitation Crab Recipe

Are you looking for a good-healthy imitation crab recipe to use for dinner tonight? Then you, my precious, have come to the right place.

I have something new and spectacular for you! (I just sang that in my twangy-sing-song voice, but you probably just sang along with me.)

Tonight I’m making a potato casserole…without the potatoes. You won’t know the difference, I promise you. Think comfort food wrapped up neatly in good-for-you sauce that will distract any nay-sayer into believing this is the greatest thing on earth! I’m balancing the heavenly-heavy cheesy sauce by eliminating the carbs and using no-fat cream cheese. (I’m still loosely following the South Beach diet phase 1 plan, but this is also appropriate for the wheat belly diet).

This meal is so delicious my taste buds are tingling in anticipation, like any good spidy sense should. Spiders probably have a wicked sense of taste.

I’ve been on the lookout for some healthy all-in-one recipes that have the following characteristics:

  1. Obviously, they must taste fantastically delicious.
  2. They must make good left-over lunches.
  3. They can’t have any grains.
  4. They must be under 4oo calories or 6 weight watcher points.
  5. Can be served to Foodies with supreme taste-buds and a distinct flavor for greatness.

With the cheesy melty gooo-dness this recipe out did itself. I’m in love and you will be too. It’s a good idea to double this recipe, if you can’t comsume all of this in one sitting then freeze the hell out of it. It freezes perfectly.

 

Ingredients:

  • 1 Large onion (diced)
  • 1 Tablespoon of olive oil
  • 1 Large cauliflower head (chopped and peeled)
  • 1 8 oz. package of no (or low) fat cream cheese
  • 2 Cups of shredded low- sharp cheddar cheese (grated)
  • a Splash of milk
  • 2 Cloves of garlic (minced)
  • 1 1/2 Cups of chopped imitation crab
  • Salt and pepper

 

Method to the Rad-ness:

Preheat your oven to 350 degrees.

Heat the olive oil over medium heat in a sauce pan and add the onions. Stir occasionally. Cook until transparent or, if you prefer like I do, brown them for a deeper onion flavor with less stink.

While cooking the onions, steam the cauliflower just enough so that a fork can slide through (about 6 or 7 minutes). Be careful not to overcook.

In a large bowl mix the cream cheese, cheddar, milk, garlic, imitation crab and salt and pepper. Add the onions when the are finished cooking, make sure that everything is mixed thoroughly then add the cauliflower.

Pour mixture into a casserole dish, cover with foil and bake for 40 minutes or until bubbly.
