Is there such a thing as a healthy crab cakes recipe?

What I have found being on this stupid loosely followed South Beach diet is it takes a lot of effort and uses up all of my time to prepare healthy meals.

For a refreshing change of pace I ventured out of the diet recipe book and went right to my comfort zone…cooking with crab meat.

It only makes sense to use crab meat when you are on a quest for a healthier lifestyle and paying attention to every little thing that you put in your mouth. Crab meat is one of the healthiest proteins you can sink your teeth into. The calories are low, there are no carbohydrates and the fat is minimum. However, there is quite a lot of salt, so you need to carefully monitor you sodium intake when you are eating a lot of crab in a day.

Healthiest Crab Cakes Recipe:

 

Ingredients

  •  1 lb of Crab meat, the better the crab meat the better these will taste
  • 2 eggs
  • 2 Tablespoons of low-fat Greek yogurt
  • 1 teaspoon of grainy mustard
  • 1 Tablespoon of lemon juice
  • 1 teaspoon of lemon zest
  • 2 Tablespoons or a couple of sprigs of cilantro chopped
  • 1 cup of Fiber One cereal crushed fine
  • 1 teaspoons of Worcestershire sauce
  • 2 teaspoons of Old Bay seasoning

 

Method to the Rad-ness:

 

Preheat oven to 375 degrees F.

In a large bowl whisk together the eggs and mayonnaise. Add the lemon juice, lemon zest, cilantro, cereal, Worcestershire sauce and Old Bay seasoning. Mix together until blended.

Gently fold in the crab meat with your hands.

Divide into 6 equally sized portions and form into patties. Place them on a cookie sheet sprayed with Pam or any other cooking spray.

Put them in the oven and bake for 15 minutes, turn them over and continue baking for another 10 minutes. Bake for 25 minutes in total.
