Frying-crab-cakes

You don’t need to wait for a special occasion to enjoy these crab cakes because they make any eating experience special. It’s all the flavorful crab and frying in clarified butter that makes these crab cakes so delicious.

If it sounds fattening and a touch unhealthy then crank up the music to drown out those ill-advised warnings. You could do a little kitchen dancing while you’re preparing and cooking these.

That should balance out the high caloric intake right? 

 

Ingredients:

  • 1/3 cup of onions (minced)
  • zest from half a lemon
  • 1/4 teaspoon of Old Bay Seasoning
  • 1 large egg beaten
  • 1 Tablespoon of chopped cilantro
  • 1/2 teaspoon of Cajun seasoning (like Slap Ya Mama)
  • 1 Tablespoon of mayonnaise
  • 10-12 saltine crackers, crushed (or if you prefer bread crumbs, panko or corn flake crumbs)
  • 2 cup of crab meat
  • 4 Tablespoons of clarified butter

 

Method to the Rad-ness:

In a bowl add the onions, lemon zest, Old Bay Seasoning and Slap Ya Mama.

In a separate bowl mix the egg, mayonnaise cilantro and crackers. Add the onion mixture.

Gently fold in the crab meat and shape into 8 patties.

Heat the clarified butter in a skillet on medium heat. Carefully add the patties cooking in two batches. Fry each side for four minutes turning only once. Remove from the skillet and drain them on brown paper bags.
