Crab artichoke dip with spinach-what could be better?

Put these three key ingredients together and you have the makings of one helluva bash to be thrown in your mouth.

I made this last weekend and it was delicious.

I love spinach for all of it’s muscle building charms. That and the fact that Popeye could lay a good beating on a ripple-ing dude named Brutto after eating a can of spinach. Artichokes are a luxury by themselves, add them in the mix and whoo-haa what a treat. And crab -say no more -SAY no more!

My haggis eating mum says this dip isn’t a meal but I will argue and win because all the food groups have been represented once you serve this up in a bread bowl, or with naan bread or crackers or any other grainy product. They all taste good with this dip.

Serve it as a meal or eat it as an appy, either way you will be terribly satisfied that you made something so awesome.

I know that spinach dip is a thing of the 90′s -so what, it’s was rad to the bone then and it’s awesome now. Channel your 15 year younger you and make this dip today -as a meal.

This dip can be prepared in advanced for up to two days and heated just before serving.

 

Crab Artichoke Spinach Dip Recipe

Ingredients:

  • 2 Cups of crab meat
  • 1 Package (8 oz.) of light cream cheese
  • 2 Cups of light mayonnaise
  • 2 Tablespoons of grainy mustard
  • 1/2 teaspoon of cayenne pepper
  • 1/3 Cup of white cheese (pepper jack, mozza or white cheddar)
  • 1/4 cup of grated Parmesean cheese
  • 2 Garlic cloves minced
  • splash of Worcestershire sauce
  • 1 Can of artichoke hearts in water, chopped
  • 4 cups of fresh spinach leaves chopped

 

Method to the Rad-ness:

In a medium bowl add the cream cheese and mayonnaise and blend until you reach a smooth consistency.

Add all of the remaining ingredients and mix well. At this point you can refrigerate your dip for up to two days before serving or move on to the next step.

In a medium sauce pan add your dip and heat on low heat until all the cheese melts. Serve immediately.
