Looks like a birthday cake but has crab meat cakes inside and potato frosting.

Baked Crab Cakes

Once I master the art of decorating and baking crab cakes I plan on starting a business making three tier wedding cakes called Crabby-Wedding-Cakes.com. I think it will be a smash hit that goes viral.

Who says you can’t play with your food?

You like to have fun when you bake, don’t you? Here’s an easy way to get everyone to the dinner table in a hurry.

I used my Old Bay crab cake recipe to make two large patties and whipped mashed potatoes as a mock icing.

 

Ingredients:

For Crab Cakes:

  • 1 pound of Jumbo lumb blue crab meat
  • 1 shredded carrot
  • 1 green pepper minced
  • 1/2 onion minced
  • 1 clove garlic minced
  • 1 egg beaten
  • 1/2 cup of bread crumbs
  • 3 Tbsp. butter
  • 1 tsp. Old Bay seasoning

For Frosting:

  • 3 large russet potatoes peeled and quartered
  • 2 Tbsp. butter
  • 2 Tbsp. light cream cheese
  • 1/4 cup milk

 

Method to the Rad-ness:

In a medium pot boil the potatoes in water while you prepare the crab cakes.

Preheat oven to 350* C.

In a frying pan or skillet saute the onions and garlic in the butter until the onions are slightly brown.

In a medium frying pan add the onion mixture, green pepper, carrots, egg, and Old Bay seasoning. Mix thoroughly. Stir in the bread crumbs. Gently mix in the Crab meat.

Separate the crab meat mixture into two even portions. Form into patties and place on a grease cookie sheet. *No need to cool first. Bake for 25-30 minutes.

Meanwhile, when the potatoes are cooked, drain and put them back into the pot. Add the butter and cream cheese and smash well. Add the milk and whisk.

When the crab cakes are done and removed from the oven, Place one of the cakes on a serving tray. Coat the crab cake with whipped potatoes on all exposed sides. Add the other crab cake on top of the whipped potatoes and add the remaining potatoes to the top crab cake.
